• 350 tomatoes, diced (2 cups)
• 250 g of cucumber, chopped (1 cup)
• 1 ripe avocado, sliced
• 1 handful chopped cilantro or parsley
• 3 tablespoons freshly squeezed lime or lemon juice
• 1 tablespoon olive oil
• optional chopped green or red onion •salt to taste Instructions: 1. Add the avocado in a bowl and mix with 1 tablespoon of lime juice. Season with salt. 2. Add the cucumbers, tomatoes and herbs in a bowl with the avocado. Add 2 tablespoons of lime juice and olive oil, then mix thoroughly. 3. Serve immediately. Salad is better not to leave for later, so do as much as being able to eat at the moment.
